Chocolate Crowns

Each crown consists of 4 layers.  The colored elements were hand-painted in colored white chocolate.  The crowns were then dry brushed with metallic luster dust (held in place by an airbrushed coat of clear alcohol), the molds were then filled with tempered chocolate, and tapped to leave a hollow shell.  The shells were then filled with a variety of flavored chocolate ganaches (from top left to bottom right): Strawberry balsamic, marsala wine, pear and goat cheese, orange and olive oil, tiramisu, and honeyed ricotta.

    I loved the goat cheese as well as the wine ones. Not too sweet but still firmly a dessert.
